Peach-Mint Green Tea
There is nothing better than receiving a sweet box in the mail from Harry & David. Every August is their Peach Harvest of the Oregold Peaches and they never disappoint. I swear the moment you open the box the delicious smell of peaches is just amazing.
I love drinking ice cold green tea in the summer. You still get the little kick of caffeine but the cool taste blended with a little lemon is so good.
One of my favorite recipes is Peach-Mint Green Tea blended with a little honey and a sweet puree from the Peaches. It is so good, I swear you’ll love it. It’s also super easy to make which is always a bonus.
8 bags green tea
2 Meyer lemons
Small bunch mint
2 large Harry & David peaches
2 tablespoons organic honey
Bring a pot of water to a boil.
Place 2 tea bags, plus a sprig of mint in each glass.
Fill glasses 1/3 full with boiling water and let tea steep for 5 minutes.
While the tea is steeping, cut one of the peaches into large chunks.
Place peaches and honey in the blender and puree until smooth.
After tea has steeped, remove tea bags and mint. Then add two ice cubes to each glass and stir vigorously until melted.
Add 3 tbsp. peach puree to each glass and stir until combined.
Cut remaining peach into 12 wedges and slice your lemons. Add two wedges to each glass and a couple slices of lemon.
Fill each glass to top with ice.
Garnish each glass with a peach wedge and a sprig of mint.
Serve immediately. Enjoy!
